FAVORITE FOODS AND RECIPES

These are a few of my favourite foods that I love to bake

THE BEST CHOCOLATE CHIP COOKIES EVER!

Ingredients
1 cup butter, melted
3/4 cup granulated sugar
3/4 cup packed brown sugar
1 tsp vanilla extract
2 eggs
2 1/4 cups all-purpose flour
1 tsp baking soda
1 tsp salt
2 cups Chocolate Chip Cookies

Method...

Preheat oven to 350c, and prepare a baking sheet with parchment and non-stick cooking spray.
Cream butter and sugars until uniform. Add in vanilla extract and eggs (one at a time) until incorporated. Sprinkle in flour and baking soda; season with salt. Stir in chocolate chips.
Scoop cookies onto prepared baking sheet and bake 7-10 minutes until golden.

LEMON MERINGUE PIE

Ingredients
Plain flour, for dusting
1 x 375g pack of sweet pastry
3 tablespoons cornflour
270g caster sugar
3 medium lemons
50g unsalted butter, cubed
3 free-range egg yolks
4 free-range egg whites

CINNAMON ROLLS!!

Ingredients
2 3/4 cups flour
3 tablespoons sugar plus 1 tablespoon for icing
1 teaspoon salt
2 teaspoons yeast
1/2 cup water
1/4 cup milk + 3 tablespoons for icing
2 tablespoons unsalted butter + 100g room temperature butter for filling
1 egg
1 tablespoon cinnamon
2 tablespoons brown sugar
1 teaspoon vanilla essence
METHOD
In a bowl, mix flour, sugar, salt and yeast.
Add water, milk, melted butter and combine well. Add the egg and knead the dough on a floured board for approximately 3 minutes. Form into a ball and reserve for 5 minutes.
Roll out the dough into a rectangle, brush it with the butter and sprinkle sugar and cinnamon. Roll up the dough and cut into 3cm slices, approximately.
Let it rise for 20 minutes and bake in a preheated oven 390F (200C) for 20 minutes.
In a pan, mix the sugar, milk and vanilla and cook in medium heat until thick.
Remove the rolls from the oven and cover them with the icing.
